Have you heard of garlic scapes?
Garlic scapes are the stalks that grow from the bulbs of hard neck garlic plants. They have to be harvested so the energy of the plant goes into making big bulbs. We harvest them, when they are curly, crunchy and so tasty. The flavor is the same as garlic with a milder touch, when cooked. They are so versatile, for all you culinary needs and so many ways to preserve them. One of our favorite is scape pesto and scape humus but you can also, simply chop and freeze or dehydrate and blend in powder. They are delicious grilled on the BBQ or in a stir fry. Scapes are only available in the spring, so get them while they are fresh.
